3 ripe mangoes peeled and diced
1 cup heavy cream
1/2 cup whole milk
3/4 cup granulated sugar
1 teaspoon vanilla extract

Prepare the mangoes:
Peel the mangoes and cut them into small, bite-sized pieces,
discarding the seeds.
Puree the mangoes:
In a blender or food processor, add the diced mangoes and blend until you
get a smooth puree. If you prefer some small fruit chunks in your ice cream,
you can leave a few pieces unblended
Mix the base: In a separate bowl, whisk together the heavy cream, whole milk,
granulated sugar, vanilla extract, and a pinch of salt until the sugar is fully
dissolved.
Combine the puree and base: Pour the mango puree into the cream mixture and
stir well until everything is thoroughly combined.
Chill the mixture: Cover the bowl and refrigerate the mixture for at least
2-3 hours, or preferably overnight. Chilling the mixture helps to enhance
the flavors and results in smoother ice cream.
Freeze the ice cream: Once the mixture is well-chilled, pour it into
an ice cream maker and churn according to the manufacturer's instructions.
This typically takes about 20-25 minutes.
Transfer to a container: Scoop the freshly churned ice cream into an
airtight container. You can also mix in some small mango chunks at this stage
if desired.
Final freeze: Seal the container and place it in the freezer for a few hours
or until the ice cream is firm and ready to be served.
