Chinese Rice |
Ingredients:
- 2 cups cooked long-grain white rice
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1/2 cup diced onion
- 1/2 cup diced carrots
- 1/2 cup frozen peas
- 2 eggs, lightly beaten
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1/2 teaspoon sesame oil
- 1/4 teaspoon white pepper
- 2 green onions, chopped (for garnish)
Push the garlic and onions to one side of the pan and add the beaten eggs to the other side. Let them cook for a moment until they start to set, and then scramble them gently with a spatula until cooked through. Once cooked, mix the eggs with the garlic and onions.
Add the diced carrots and frozen peas to the pan and stir-fry for another 2-3 minutes until the vegetables are tender.
Now, add the remaining 1 tablespoon of vegetable oil to the pan and add the chilled cooked rice. Break up any clumps of rice with your spatula and stir-fry everything together to ensure the rice is evenly coated with oil and the other ingredients are mixed in.
Drizzle soy sauce, oyster sauce (if using), and sesame oil over the rice. Continue to stir-fry for an additional 2-3 minutes, making sure the sauces are well distributed and the rice is heated through.
Season the fried rice with white pepper, and give it a final stir to combine everything.
Remove the skillet from heat, garnish with chopped green onions, and serve immediately.
